Recipe | Simple Oregano Chicken and Asparagus







Healthy eating is difficult when you have a busy lifestyle or a low budget. One of my favourite things to cook is home-made mashed potato and when paired with vegetables and meat, I see that as the best way to get a balanced meal that fills me up. Here's a simple chicken recipe that you can whip up in half an hour!

Ingredients:
(For one person, double or size accordingly for two or more people)

1x Large Potato
1x Pack of Chicken Breast Strips
Asparagus 
Oregano 
1x Garlic Clove
Butter 
Milk
Oil

Method:
  • Chop the garlic and place to the side.
  • Peel and slice the potato into 4 pieces and place in a pan on the hob in hot water to boil for roughly 15 minutes.
  • Heat some oil in a frying pan and place the chicken strips in. Once sealed (white around the outside) sprinkle the chicken on both sides with Oregano.
  • Leave the chicken to cook for around 15 minutes, turning occasionally.
  • Heat a frying pan with a tablespoon and a half of butter and once almost melted, drop in 3/4 of the chopped garlic.
  • Place the asparagus in the melted butter and leave to cook for around 7-10 minutes, rolling them regularly so they cook evenly.
  • Once soft, remove the potatoes from the heat and turn down to a low heat. Drain the potatoes and place them back in the pan. 
  • Place 1 tablespoon of butter and a splash of milk into the pan and mash the potato (with a fork for best results!) until creamy. Add in the rest of the garlic to the mash mixture and place back on a low heat to keep it warm. 
  • Remove chicken and checked that it's cooked all the way through and then you're ready to serve up your meal!

Some of the measurements may vary on your preference, but i like my chicken crispy and my mash buttery and creamy! All the ingredients are easy to pick up and this meal can be made for around £6! Bargain! It's such a simple meal and is perfect for summer as it's not too heavy. Tried it out? Let me know what you think in the comments!
