Recipe: Prawn, Chorizo & Pea Pasta




So it's safe to say I am no Gordon Ramsay when it comes to cooking, but it's something I really enjoy and have learned (with a lot of help during my teen years from my mother) how to improvise with food. Even when I am following a recipe I like to as a dash of this and a dash of that!

I pulled together a few different things to make the pasta I shared on my Instagram, and after a few requests here is the recipe! (kind of....) You may have to do some bits by eye or personal preference like how many peas you want etc, but the base of the recipe is here.

I cannot take credit for the recipe for the white sauce so here is the one I used, it's super easy:

What you will need for two people:

  • 2 x packs of prawns (around 600G)
  • Chorizo (as much as you wish, probably about 100G? chopped up)
  • Frozen or fresh peas
  • Dried mixed herbs (or just oregano if you only have that)
  • Linguini 
  • Salt
  • Butter
  • Fresh Garlic (2 cloves) in tiny pieces or Easy Garlic (2 tbsp)

  • Garlic Bread (optional)

How to make it:

1.  I started off by popping some butter into a frying pan on a medium heat, sautéing the prawns and the chopped chorizo. Stir it round so that the butter covers all of the ingredients. Add in your easy garlic (2 tbsp) or chopped fresh garlic (two cloves) and mix that in well too. Leave to sizzle quietly on a medium heat. Remember to keep stirring it every now and then so that it cooks evenly. 

2. Measure out the white sauce ingredients, and cook as instructed. This will take a bit of stirring so be prepared!! If you want it more cheesy add more in, but it comes out quite thick so you could add more milk to soften it if you wanted. 

3. In a large pan, fill with boiling water and sprinkle in some salt (I like to put a lot in there for proper Italian style salty pasta). Cook Linguine to pack instructions while you continue stirring the sauce and turning the prawns. 

4. Pop the garlic bread in the oven and leave to cook according to pack (probably around 10 mins). Grab the peas, if you're using frozen then quickly pop them in the microwave for 2 minutes to defrost.

5. Once the pasta is pretty much cooked, add all of your ingredients into the frying pan with the prawns and chorizo. DO NOT drain the butter and garlic out. Leave it in for flavour. Pour in the pasta, sauce, peas and add the dried herbs, (I covered the top with a thin layer all over) and stir everything in together. leave to melt together for a few minutes still stirring.

6. Serve with your garlic bread and enjoy!
